Our proposal for Gyumri‘s Culinary School is a tribute to the city‘s rich history and vibrant cultural heritage.

The tuff stone is the Armenian material identity.

In Gyumri, the black tuff stone is more common, yet we chose the reddish tuff stone due to culinary psychology. Red is scientifically proven to be an appetite-enhancing colour.

This choice not only grounds the project in the local context but also symbolizes resilience and continuity in the face of change.

Rather than erasing the remains of the old city market, our project embraces and builds upon them, preserving the marketplace‘s historical significance.

The new structure rises respectfully above the old, extending the public space and inviting the community to engage with the school and market as a unified environment. This integration creates a dynamic hub where education, commerce and daily life converge.

The culinary school itself is a dynamic fusion of tradition and innovation, designed to foster self-learning, collaboration and a deep connection with the local food ecosystem.

By situating the school within the historic market, students will remain in direct contact with local farmers, vendors, and restaurateurs, ensuring that their education is deeply rooted in the region‘s agricultural and culinary traditions. This project is not just about constructing a building; it’s about revitalizing Gyumri, honouring its past, and empowering its future through the transformative power of education and community collaboration.
